Chocolate Green Monster

Green Monsters have totally saved my life. Totally.
I generally have no use for salad. Ugh, I know. BAD.
The only kind of salad I like is one covered with chicken, bacon, pecans, cheese, blah blah blah.

However, that is not always so great for your health.
I used to eat one salad at a restaurant (*cough* Boston Pizza) thinking I was soooo good.
Then I went online and saw that this salad had 1500 calories.

Yipes. That’s like, pretty much an entire day’s worth for me.

Anywhoo, to the point, I found Green Monsters, which is a smoothie made with spinach.

GASP! I know, but YUM.

You can’t even taste the greens and it’s a great way to get the nutrients.
Not to mention that I had my braces tightened yesterday *ouch* and thought I would starve to death.

I usually drink the same old one, which I will post another time, but this morning I was needin’ some choco!

This will be great for those who enjoy dark chocolate, it’s not overly sweet but I love it!

Chocolate Green Monster

1 1/2 cups of almond milk
2 handfuls of baby spinach
1 frozen banana, thawed
2 heaping tablespoons of pure cocoa
1 tablespoon of flaxseed powder

Place ingredients in order of list, blend until completely smooth with no pieces of spinach remaining.

I would rather drink this than a sugar-filled breakfast drink any day!
If I had some protein powder I would have added that as well.

You can also add ice if you like.

“Eggs”cellent!

breakfast!

Today marked our first actual ‘Saturday Morning Breakfast’ in the new house.
Something nicer than a bowl of Cheerios.

Please, God.

I used a recipe from Eating Well…Living Thin, a yummolicious ‘Spinach Cheese Bake’.

I LOVE Linda’s blog! I’ve been using her recipes for almost a year now, and she truly helped me make healthier meals without being so over-the-top that it felt overwhelming. 25 lbs later, I can honestly say that I found Linda’s blog at a time when I very much needed some guidance and it made a huge difference.

I made a couple of modifications based on what I had in the fridge, etc.
I used sugar instead of splenda, and light ricotta instead of cottage cheese.
I also used fresh baby spinach and not as much as would be in a package of frozen since I sometimes have trouble eating all my vegetables!
(Baby steps…)

It was sooooo good, and my husband loved it!
